Cured Yolks
Today I buried some eggs, one in salt the other in sugar. After about a 30min, the yolks are cooked outside and still runny inside. We tested them with toasted muffins, melted butter, sweet balsamic, truffle oil and red pepper corns 👌🙌
Maybe smoking the eggs a little could add some extra flavour. Or served just as they are for a beautiful golden garnish on the right dish. mmm mmm
